Why your brownies aren't fudgy — and the one change that fixes it

Almost every "cakey brownie" complaint comes down to the same thing: too much air. Fudgy brownies want a dense batter, and the moment you cream butter and sugar until fluffy, you've made cake.

Melt the butter with the chocolate, whisk in the sugar just until it disappears, then add the eggs one at a time and stop the second the streaks are gone. Fold the flour in with a spatula — 15 to 20 folds. The batter should look glossy and thick, almost like ganache.

Then underbake by cake standards: pull it when the edges are set and the centre still jiggles slightly. A toothpick should come out with moist crumbs, not clean. Cool 45 minutes before cutting.

Still cakey? Use a metal 8-inch tin, not glass, and check your oven with a thermometer — the cheapest upgrade a baker can make.

Cookies in the air fryer vs. the oven — I made both

Same dough, same day. Air fryer: about 10 minutes at 180 °C, crispier edges, paler top. Oven: about 15 minutes at 180 °C, more spread, chewier middle.

Which one I'd pick

For six cookies or fewer, air fryer — faster, no preheating. For a full batch, oven, or you'll be doing four rounds. In the air fryer, line the basket with parchment and leave 3 cm between cookies or they fuse.

No cream cheese, no oven — how the cheesecake still sets

Two things do the job: thick Greek yogurt for the body, and agar-agar for structure. Agar sets firmer than gelatin and holds at room temperature, which is why the squares cut so cleanly.

The proportions that worked

For an 8×8 pan: 450 g thick Greek yogurt, 225 g pumpkin purée, 65 g brown sugar, 2 tsp pumpkin pie spice, and 1½ tsp agar-agar activated in 3 tbsp boiling water. The one rule: whisk continuously while the warm agar goes in, or it sets in strings. Then four hours in the fridge, overnight if you can.

The most common request in comments is "crispy without the oil." The chicken burger recipe uses a light brush of oil and a hot basket — the crunch comes from the coating, not from frying.

Butter cookies vs. sugar cookies — what's actually different

Butter cookies use more butter and less sugar, no leavening, and are piped rather than rolled. They don't spread, which is why they hold their shape and stay crisp.
