Soft and chewy double chocolate cookies loaded with rich cocoa flavour and pieces of dark chocolate. The dough is chilled in the freezer for 30 minutes before baking, which gives beautifully thick cookies with set edges and a soft, chocolatey centre.

Ingredients

  • 1 cup (227 g) butter, softened
  • ½ cup (100 g) white sugar
  • 1 cup (200 g) packed brown sugar
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 2 eggs
  • 2½ cups (300 g) plain flour
  • ½ cup + 1 tbsp (≈50 g) cocoa powder
  • 1 tsp baking soda
  • ¾–1 cup (130–150 g) chopped dark chocolate

Method

  1. Soften the butter until soft but not melted. Beat with white sugar, brown sugar and salt until creamy.
  2. Add the eggs and vanilla and mix well.
  3. In a separate bowl combine the flour, cocoa powder and baking soda. Add to the wet mixture and mix just until combined.
  4. Fold in the chopped dark chocolate.
  5. Place the whole dough in the freezer for 30 minutes.
  6. Shape the chilled dough into large, slightly irregular balls and space them out on a lined tray.
  7. Bake in a preheated oven at low-to-medium heat for 15–20 minutes. Start checking at 15 — edges set, centre still slightly soft.
  8. Turn off the oven and let the tray rest inside about 5 minutes if needed. Remove, cool and enjoy.
